Baked Crab Cakes with Red Pepper Chipotle Sauce

So, what do you do when you hear that your local WholeFoods shop has fresh lump crab meat on sale, at half price? You jump, run and get it before it is sold out. I couldn’t think of anything else than crab cakes. I love baked crab cakes, who doesn’t? Have discovered them during our trip to Maryland last year and was instant addiction. There is nothing better than crab and a beer!

I was looking for a recipe that will focus on the sweet pure taste of the crab meat with a minimum of ingredients added. I like the taste of the crab meat and I didn’t want to loose it between so many seasonings. Was looking for something simple that will compliment the crab flavor just perfect, not something overpowering it. It is so easy to loose the flavor!

The red pepper chipotle sauce was just the perfect addition to the cakes, as I needed a spicy touch. So delicious and full of flavor! I have chosen to roast the red peppers. It is so simple and cheaper, not to mention how wonderful the house smells while they are roasting. But if you are in a time limited, feel free to use jarred peppers.

Baked Crab Cakes with Red Pepper Chipotle Sauce

Ingredients

    For Crab Cakes:
  • 16 ounce container lump crab meat (check if it was really hand picked of shells)
  • 1/2 cup bread crumbs
  • 2 whole eggs
  • 4 finely chopped scallions
  • 3 tbsp finely chopped fresh red pepper
  • 1 tbsp low fat mayonnaise
  • 1 tbsp chopped parsley
  • 1 lemon, juiced
  • salt and pepper
  • olive oil cooking spray
  • For Red Pepper Chipotle Sauce:
  • 1 tbsp roasted red peppers
  • 1/4 cup light mayonnaise
  • 1tsp minced canned chipotle chilies in adobo sauce
  • 1 tsp fresh lime juice

Instructions

Drain the crabmeat, if necessary, and pick through it for shells. Put the crab in a medium bowl and set aside.

In a large bowl, combine the bread crumbs, eggs, scallions, red peppers, mayonnaise, parsley, lemon juice, salt and pepper. Mix well, then fold in the grab meat trying not to turn the mixture into a mash. Gently shape into patties. (I made 12 patties about 1/2 inch thick). Chill in refrigerator for 1/2 hour at least before baking.

Preheat oven at 400F/ 200C. Grease a baking sheet with cooking spray. Bake them about 10 minutes on each side, until nicely browned.

Meanwhile baking, in a small blender puree the roasted pepper, chipotle chillies, mayonnaise, lime juice.

Drizzle the sauce over crab cakes and enjoy!

Just Juice Monday – Pineapple and Kale Juice

Good morning everyone! It’s Monday again :) I cannot believe the summer holiday will be here soon…just one more month to go! I am really looking forward to enjoying it with my daughter. Precious time. Cannot wait. What plans do you have for this summer?

For today, I will focus on my latest obsession: pineapple.

I could have pineapple everyday. Big chunks of it or juice. I wanted to combine it with some greens (you cannot have enough of these and I definitely don’t include them too often in my diet) so I added some kale and swiss chard leaves. The combination is perfect, the greens are not overpowering, don’t worry. This juice is so delicious, simple, green! healthy and the perfect way to start your week.

Pineapple and Kale Juice

A simple and refreshing juice made from pineapple, kale and swiss chard leaves, and lime. Only 4 ingredients to make this delicious, healthy juice!

Ingredients

  • 1/4 Pineapple
  • 4 Kale leaves
  • 4 Swiss chard leaves
  • 1 Lime

Instructions

Peel, core and cut into pieces the ripe pineapple.

Wash the kale and swiss chard leaves and slip them between the pineapple pieces.

Add the peeled lime.

Juice them together.

Enjoy!!

This gorgeous place it’s not just a library, it is a museum. The outside of the building is beautiful, but wait until you get inside…it’s breath taking. It is everything you have heard or seen of, and more. It’s more magical than words can describe.

The entry hall is spectacular. The marble floors and the staircases take you back in time, to scenes from movies we all love. Every room and every nook…tell their own story, waiting just to be discovered. The architecture inside is magnificent: bronzed ceilings, soaring rotundas, beautiful archways, marble pillars, chandeliers. Everything is perfect.

The famous Rose Main Reading Room is lined with thousands of books and long oak tables, lit by elegant bronze lamps. The ceiling is decorated by murals of vibrant skies and clouds.

The large wall panels with photographs, objects and text describing the history and the services and collections, are well done and very informative.

Roast chicken with thyme, garlic and paprika recipe

Today I want to share with you my favorite roast chicken recipe. Yes, the classic roast chicken. So simple, yet so special. The king of dish that brings the whole family together at the table and you just enjoy it. No forks, no knives, no fuss…just oily fingers. Happy fingers :)

The secret of this recipe stays in choosing the main ingredient: the chicken. The grass-fed, pastured, chickens are the best. The problem is it’s not so easy to find them. They are available throughout family farms so you can check with your local farms if you can buy from them. These chickens are grown the old-fashioned way and are more flavorful than the regular supermarket ones. The meat is moist and juicy. Just what it should be.

Roast Chicken with Thyme, Garlic and Paprika

Prep Time: 15 minutes

Cook Time: 65 minutes

Ingredients

  • 1 whole chicken (preferably pastured chicken) - around 4lbs/1.8kg
  • 1 large red onion
  • 1 lemon, halved
  • 8-10 fresh thyme sprigs
  • 5 garlic cloves, crushed
  • 2 tablespoons butter
  • olive oil
  • kosher salt
  • black pepper
  • paprika

Instructions

Preheat the oven to 425F/220C.

Rinse the chicken, then dry it well with paper towels, inside and out. Salt and pepper the cavity and then stuff it with the fresh thyme, the whole onion, both halves of lemon and all the garlic. Cut the butter into small pieces. Slip your fingers under the chicken skin and loosen the skin over the breast and thighs. Slip the pieces of butter under the skin and massage the chicken to distribute the butter. Rub the exterior of the chicken with salt, pepper. Sprinkle some olive oil on top of it. Add some fresh thyme and paprika. Place the chicken on a roasting pan and it's ready to go into the oven.

Start with the oven at 425F/220C for 15-20 minutes then push it down to 350F/180C for the remaining 45 minutes.

Let the chicken rest for 10-15 minutes before carving it, so it keeps more of the juice inside the meat.

Just Juice Monday – Strawberry Lime Juice

Good morning everyone! Welcome to my new fresh looking blog! Glad and relieved to get my posts back online. Was quite a challenge last week to have everything moved to the new platform, as you can find bits and pieces on the internet on how to do it, but never the whole thing properly explained :) But this is a different discussion, that I’ll cover later in a post. Hopefully it’s not going to take too long to put all the details together.

Now back to this gorgeous Monday morning. I know not everyone is so fortunate to enjoy this beautiful, sunny morning. There are some states that are facing severe weather today and some that have received quite some snow yesterday. I hope everyone will be safe out there.

For today’s Just Juice Monday, everything is about strawberries. I loooove strawberries.  I like them fresh, just picked. I love the m with whipped cream or dipped in chocolate.  I like a piece of toast with strawberry jam and so on… Everyone loves strawberries. You love the too!

 They are great! Great for your health too. They contain acids that helps fight inflammations and cancer-causing cell damage. They are also a top source of vitamin C and potassium. There are so many reasons why strawberries are good for you: they are low in calories and high in fiber, they boost short term memory, lower cardiovascular disease and have anti-aging properties. Just to name a few. So, give them a big go this spring and try and include them everyday in your meals!

Strawberry Lime Juice Recipe

1 cup strawberries

2 oranges

1/2 lime
