Just Juice Monday – Blackberries & Kale Juice

So glad it’s Monday!!!! Never thought I’ll hear these words coming from my mouth…. but after all the lamb, chocolate desserts and other treats, I was really looking forward to having a juice day. What happened to me??!!

For today, I focused on kale as main ingredient. We all know kale is an excellent source of beta-carotene, vitamin C, iron and potassium. I have found out recently that is also packed with readily absorbed calcium, so just another reason to add it more often on my grocery list. So, after a quick look in my fridge I came up with a combination of kale and fruits for today’s post.

Kale & Blackberries Juice Recipe

2 apples (I had Organic Gala)

2 carrots, peeled

1 mandarine, peeled

2 cups blackberries

5 leaves kale

Makes 1 serving (16oz)
